- Broccoli: You can buy some broccoli crowns or pre-cut florets for this recipe. Be sure to cut the florets into small pieces and use fresh broccoli. Frozen broccoli will be too soft.

- Cooked Bacon: this adds texture and delicious richness. you can cook the bacon in the oven or in the kitchen Just make sure to drain it before use.

How to Make Creamy Feta Broccoli Salad
- Do the decorating. Whisk all dressing ingredients except water in a small bowl. Then slowly whisk in the water until the dressing is smooth and creamy.
- Combine the salad ingredients. Add the broccoli, feta, bacon, pistachios, red onion and dates to a large bowl.
- Toss the salad. Pour the dressing over the salad, and toss to combine and coat the ingredients.
- serve up Season with salt and pepper to taste, add more crumbled feta and enjoy!

How to save
Leftovers will be kept fresh in an airtight container in the refrigerator for 3-4 days. Before serving, stir quickly to redistribute the ingredients.
I do not recommend freezing this recipe! The salad is wet, and the dressing is usually separated after thawing.

- 24oz broccoli floretschopped into bite-sized pieces
- 4oz feta cheesegrind it
- 4 slices of cooked bacon, chopped
- 1/2 the cup roasted pistachioschopped up
- 1/2 the cup thinly sliced red onion
- 12 medjool dates, chopped
Creamy tahini for dressing
- 1/4 the cup tahini
- 1/4 the cup olive oil
- 1/4 the cup honey
- 1/4 the cup lemon juice
- 1 teaspoon kosher salt
- pepper to taste
- 1/3 the cup the water
- Make the dressing: Add all dressing ingredients, except water, to a small mixing bowl and whisk until well combined. Then slowly whisk in the water until smooth and creamy.
- Add the broccoli, feta, bacon, pistachios, red onion and dates to a large mixing bowl.
- Pour the dressing over the salad ingredients and toss until well combined.
- Season with additional salt and pepper to taste and finish with more crumbled feta. Enjoy!
