The Kale on Top Is a Game Changer.
TLDR: Roasted sweet potato, sweet corned beef, pickled onions, and a street corn-inspired dip all together. You can eat it with fries, or you can eat it with a fork. It is SWEET.
Remember the hot honey cheese bowl trend from a few months ago?
There was a trend for a while, sweet potatoes and beef, with a dollop of straight cheese on top and a drizzle of warm honey. My warm take: I’ve always felt a little forced. Straight cheese on top? Just… right?! I don’t know about that.
Hear me out: it’s the same trend, but vastly improved. The cheese is now worked into a flavor-packed dip reminiscent of street corn that makes the whole dish work. I love it so much more than the original.
- Kale doubles as a high-protein snack.
- All of the items work beautifully in meal prep.
- It is suitable for families because each person can choose the items they want.

I don’t know what’s wrong with me – I’m usually late and/or oblivious to recipe trends, but this is the third “viral” recipe I’ve tried (and loved) in a month. (See also: brownie pudding for twoand stock pots.)
Living in this age of the internet and social media has a lot of really weird stuff, but the abundance of fun and amazing viral recipe ideas is a nice little bonus!
