These Almond Butter Protein Balls soft, chewy and packed with sweet blueberries and rich chocolate chips in every bite. I’ve been on a mission to make delicious protein-packed snacks that you’ll actually want to eat and these balls made the cut! Made with just a few simple ingredients, these are easy, no-bake recipes that are perfect to have on hand for a quick breakfast, snack, or dessert!

9-Ingredients, Baked Almond Butter Protein Balls

This year I had fun creating protein ball recipes with unique flavor combinations. So far I’ve made some fun flavors cookie dough protein balls, lemon blueberry protein ballsand no brownie oven and they are all delicious. At this point there’s always a batch in my freezer for quick snacks or when I’m craving something sweet but still want to hit your protein goals.

These almond butter protein balls have been my go-to lately, they have the perfect texture and the combination of blueberry and dark chocolate works so well together!

A few notes on the main ingredients

This is an overview of the main ingredients in this recipe. See recipe card below for full ingredients and instructions.

    • Protein powder: I prefer to use it unflavored whey-based protein powder for this recipe, but you can change it and use whatever you like. Vegetarian or vegan plant-based protein will work too!
    • Almond flour: this helps the dough bind. For best results, I recommend using blanched almond flour. It has a finer texture, and the almond skin is completely removed, which helps give these bites a smooth consistency.
    • Creamy Almond Butter: this adds a subtle nutty flavor and acts as the ‘glue’, holding the balls together. I like to use store bought creamy almond butter with just one or two ingredients or make my own batch. homemade almond butter. You can also replace the almond butter with cashew butter if you prefer!
    • Maple syrup: this gives the balls the perfect touch of sweetness. If you prefer, substitute honey.
    • Vanilla Extract: this gives the balls a delicious vanilla flavor which boosts the sweetness a bit!
    • Blends: chocolate chips and dried blueberries work so well in these balls! I prefer to use small dark chocolate chips, but regular or milk chocolate, semi-sweet chocolate, or white chocolate will also work.

    Tips and tricks from Ashlea

    • make sure use natural, smooth, creamy, dripping almond butter for best results. Something like Jif or Skippy won’t work well in this recipe. The dough will be too dry, and the balls may come out crumbly.
    • If you add too much dry ingredients and the dough seems a bit dry, try it adding a tablespoon of extra almond butter! Or, if the dough is too wet, add additional almond flour until it holds its shape.
    • Let the dough cool before pulling out a little and rolling. I find this makes forming the “dough” into balls much easier.
    • A cookie dough ball It’s the easiest way to get these balls out and roll them. believe in me

    How to save

Refrigerator: Store these almond butter energy balls in the fridge to keep them fresh for up to a week.

Freezer: My favorite method of storing these balls is in the freezer. They freeze extremely well in a freezer container or bag and stay fresh for up to 3 months.

To freeze the balls, place them on a sheet pan lined with parchment paper and then place the pan in the freezer for 30 minutes to firm up a bit. Then transfer the balls to a freezer bag or container. When you’re ready to eat, take a bite and let it thaw at room temperature for a few minutes before digging into it!
