Ingredient notes
- Fish. White tilapia fillets are mild, budget-friendly and quick to cook. Cod, drum, flounder or sole also work well, although thicker fillets may need a few extra minutes in the oven.
- Panko. Panko breadcrumbs give the top its light, crunchy texture and golden crunch, but regular breadcrumbs can be used for a softer, more delicate crust.
- Parmesan. Parmesan cheese adds a salty, savory flavor to the appetizer. Freshly grated Parmesan melts beautifully, while grated Parmesan creates a finer, smoother crust.
- Herbs and spices. The garlic powder adds spiciness without being too moist, while the paprika gives the dish a little depth. Garnish with fresh parsley or substitute dried parsley if that’s what you have on hand.


How to bake tilapia
- Stir in the Parmesan panko mixture and dry tilapia.
- Put it in a pan and drizzle with melted butter and a squeeze of lemon.
- Sprinkle the Parmesan panko mixture over the fish and bake (full recipe below).

Storing Baked Tilapia
- Residues. Store leftover baked tilapia in an airtight container in the refrigerator for up to 4 days.
- Freezing. Freeze cooked tilapia in an airtight container for up to 2 months. Thaw overnight in refrigerator and gently reheat.
- Overheating. Heat in a 300°F oven or fan until heated through. The microwave works, but the top will soften and the fish can dry out if overheated.

Preheat oven to 400°F.

To make the topping, combine the Panko, Parmesan, parsley, melted butter, garlic powder, and paprika in a small bowl.

Wash the tilapia fillets, pat dry and place on a baking sheet sprayed with cooking spray.

Sprinkle with butter. Squeeze lemon juice over the fillets.

Top with Panko mixture.

Cook for 15 minutes or just until cooked through and fish flakes.
